I'm not sure why people still need a recipe for making sauerkraut like it's some crazy foreign concept. I mean, come on, take some veggies, throw 'em in a jar with some salt and voila! You've got fermented goodies . The real magic happens when you experiment with different combos of ingredients - trust me, that ginger and turmeric combo on squash is a GAME CHANGER . And don't even get me started on the benefits of fermentation... it's like a health superpower in a jar . My only pet peeve is people using citronella zest from those fake citrus sticks . Get organic, folks!
idk why ppl would use non-organic citrus zest lol... fungus and pesticide free is def a must . but fermenting other veggies like carrots & squash sounds pretty cool . i've been experimenting with that too, adding some cumin seeds for extra flavor. has anyone tried using different types of vinegar in the brine? i heard balsamic or apple cider might add interesting notes to the sauerkraut .
